There’s something about the summertime that makes us more social; we tend to go out a lot more as well as entertain. It’s light and, dare I say it – healthy! I served this as a dip but this would be great over fish, chicken or tacos. We had a super fun night, who doesn’t love a spontaneous party?

Black Bean and Corn Salsa

1 can black beans, drained and rinsed
2 ears corn, grilled
¼ cup finely chopped red onion
2 roma tomatoes, finely diced
2 cloves garlic, crushed
Juice of 1 lime
½ tsp black pepper
½ tsp salt
½ tsp honey
2 tbsp finely chopped cilantro
Place all ingredients in a bowl, stir to combine. Place in the fridge for at least an hour before serving. Add fresh chopped cilantro and serve with tortilla chips.

The Bud Light Lime Ritas are so delicious that wherever they go a party spontaneously happens.
