		<description><![CDATA[Jehan, you sound like me - we both love to eat GOOD food!  This is a dessert my mother made for us when we were small children, and I remembered how I loved this - it is sooooo GOOD and good for you!  We stopped making it for years, I&#039;m not sure why.  I think you will like this.  I suggest you try this recipe and please let me know if you like it.  Please email me your response.  

ps:  be sure to not over-bake this, you want the &quot;fat top&quot; to be &#039;soft&#039;.  As it is baked in the oven, a delicious, flavorful, soft layer forms at the top, which is why it is known as &quot;fat top&quot;.  Over baking will result in an overdone crust and you don&#039;t want that.  I use organic cornmeal and organic coconut milk/cream.  The cornmeal I use is &quot;Bob&#039;s Red Mill&quot; which is organic.  

FAT TOP RECIPE

1 can coconut milk
1 cup brown sugar
1 tsp salt
1/2 lb coarse cornmeal

Mix all ingredients together in medium size pyrex dish.  Add 2 cans of water and mix thoroughly.  Bake in 350 degree oven for about 45 mins to 1 hour or until the top is cooked to a SOFT consistency.  Then remove from oven and allow to cool.]]></description>
