I’ve always drooled over these apple tarts photos and have always wanted to try it. Well today is 28 degrees and snowing in NY and I decided I needed comfort food. I made Turkey and Rice soup for lunch but was aching for dessert. I wanted something that was quick and easy…then I remembered the last sheet of puff pastry I had leftover from a cocktail party I kept for my birthday. Its January 2009 and we’ve been health nuts since the new year so we had an abundance of fruits, apples being among them. It was time..time for me to stop drooling and start baking my apple tarts. Anyway…here’s my recipe.

Apple Tarts

1 sheet puff pasty
1 golden delicious apple sliced thinly
1/4 cup sugar
1/4 tsp cinnamon
heavy cream for brushing sides
1/4 cup apricot preserves

Defrost puff pastry sheet according to directions. I used Trader Joe’s puff pastry so it was already pricked, if not do so with a fork. Mix apples, sugar and cinnamon together. Place slices neatly on the puff pastry leaving an inch border around all sides of the puff pastry. Brush the 1 inch border with heavy cream and bake for 12 mins at 375 degrees. While puff pastry bakes place the apricot preserves in the microwave for 20 seconds until softened enough to spread. Take puff pastry out of oven and brush the apples with the softened apricot preserves. Place back in oven for 5 mins at 400 degrees.
